Done this swap about 20 years ago with a mates v6 gt capri and it made a heap of difference in every aspect of driving it from the h'way to around town and it ran 15.1 down the 1/4 full street trim which i thought was pretty quick for what they are.

People are inclined to make radical changes when in reality all thats required is a little fine tuning.
Assuming that the 4 speed works well all I would do is change the diff ratio to 3.09 (standard is 3.22) as per the later models. This will give the longer legs that you want as well as better first and second overall ratios. There is no butchering of the original car and cost of crownwheel and pinion should be in the region of $500.
Apart from this do what clevocapri says only to a four cylinder one.
