Default oil and water temp gauges

hi everyone, tomorrow im getting two speco gauges installed on my car. they are oil temp and water temp. just wondering what the gauges should sit on? what is the normal operating temp?

Water can hover up to 100degrees celcius and oil temp I am not certain I think its around 50 degrees
